"Eat more Greens" is a vegetable cafe & bakery with a theme of 'Natural material' which people living in the Lower East Side and East Village in NY use daily. The SOHO and the area of Lower East Side in Manhattan, NY is now the center of commerce. Since the rent is very high, it is very difficult for people to own and start their own shop. But, if you just step one more alley forward, or go to Brookline, there are so many 'sparkling' handmade and a cutting edge Vegetarian cafes and bakeries waiting for you. Staffs with the same will and ambition make the shops all by themselves, and they also make fabulous handmade goodies, and make their own livings and run their shops. We, "Eat more Greens" are hoping to be your only 'sparkling' shop like the ones in NY.

Our menu will delight people who are vegetarian or vegan or anyone who loves to eat! The ingredients are 'no meat, no fish, and no egg' and we use 'vegetable materials' in all of our menu, but you will definitely enjoy it without realizing those selected ingredients.

The vegetable cafes in NY provide delicious menu using vegetables made by local farmers. On the weekends, 'Farmers' Market' is held in parks. Wishing to be just like the shops in NY, "Eat more Greens" offer the menu using fresh vegetables direct from orchards in Japan. We use vegetables that taste best when they are in season. We actually ask the farmers to come and hold a 'Weekend Vegetable Market' on a regular basis. It is usually held on Saturdays, but if you have any interest, please check the schedule on our website.

We wish you to come here and taste the delicious and also safe menu, using vegetables that taste best when they are in season, and also buy vegetables, fruits, and young plants directly from farmers on weekends. You can have a conversation and talk with the farmers when you come and buy at the shop. This way, we think that you can know more about the ingredients you eat, through coming to "Eat more Greens". Plus, we think it is best that the producer and the purchaser having a close relation. This is the idea of our shop.

Our concept is a 'vegetable and vegan bakery cafe' like the ones in Down Town, NY.

The inside of our shop is mainly made by various materials such as steel, concrete, and wood which are called the NY material. We put handmade tiles and art work with a motif of NY, and also posters like the ones posted everywhere in the city of NY that will make you feel as though you are in NY.

We randomly place well-used furniture with various figures, and produce a natural and relaxing space. (We call this space that has both the sense of 'natural' and 'hard' = Natural edge.)

The Kitchen & bakery factory are all open-style, and not only gives power and flow into the shop, but it also produces entertainment in front of our guests. In addition, we think the necessity of our customers to see the process of cooking right in front them to feel safe eating at our shop, "Eat more Greens".
